اثر استفاده‌ی کنجاله کلزا به جای کنجاله سویا بر کیفیت گوشت، مورفولوژی و جمعیت میکروبی ایلئوم در بلدرچین ژاپنی

چکیده

آزمایشی به‌منظور بررسی اثرات استفاده‌ی کنجاله کلزا به جای کنجاله سویا بر کیفیت گوشت، مورفولوژی و جمعیت میکروبی ایلئوم در بلدرچین با تعداد 675 قطعه بلدرچین ژاپنی در قالب طرح کاملاً تصادفی با 9 تیمار، 5 تکرار و هر تکرار با 15 قطعه بلدرچین انجام شد. تیمارها شامل شاهد: جیره پایه ذرت و کنجاله سویا، کنجاله کلزا جایگزین 25، 50، 75 و 100 درصد با کنجاله سویا و همان تیمارها با افزودن پروبیوتیک پروتکسین (200 میلی‌گرم در کیلوگرم) در جیره غذایی بودند که در سن 7 تا 35 روزگی مورد استفاده قرار گرفتند. نتایج نشان داد تیمارها بر اسیدیته گوشت بلدرچین و افت خون‌آبه آن تأثیری نداشتند و کنجاله کلزای بدون پروبیوتیک تأثیری بر کیفیت گوشت بلدرچین نداشت (05/0<P). تیمار 25 درصد کنجاله کلزا با پروبیوتیک در مقایسه با سایر تیمارها بیشترین ظرفیت نگهداری آب، کمترین مقدار افت پخت، و بیشترین میزان شمارش لاکتوباسیل را داشت (05/0>P). همچنین تیمارهای شاهد و 25 درصد کلزا با پروبیوتیک کمترین میزان مالون‌دی‌آلدئید و تیمارهای 25 و 50 درصد کلزا با پروبیوتیک کمترین میزان شمارش باکتری اشریشیاکلی را داشتند (05/0>P). همچنین تیمار 25 درصد کنجاله کلزا همرا با پروبیوتیک بیشترین طول پرز روده و کمترین میزان عمق کریپت را در مقایسه با سایر تیمارها داشت (05/0>P). نتایج در این مطالعه نشان داد که با توجه به اثرات مثبت جایگزینی 25 درصد کنجاله کلزا با کنجاله سویا و استفاده از پروبیوتیک پروتکسین بر کیفیت گوشت، مورفولوژی و جمعیت میکروبی ایلئوم بلدرچین ژاپنی می‌توان از این منبع پروتئینی قابل دسترس در جیره بلدرچین ژاپنی استفاده کرد.

چکیده [English]

This study investigated the effects of using rapeseed meal instead of soybean meal on meat quality, morphology, and ileum microbial population in Japanese quail using 675 Japanese quail in a completely randomized design with 9 treatments, 5 repetitions, and 15 quail per repetition. The treatments consisted of a control group fed with a corn and soybean meal-based diet without additives, as well as rapeseed meal replacing soybean meal at 25, 50, 75, and 100 percent both with and without protoxin probiotic (200 mg/kg) supplementation diets from 7 to 35 days of ages. Treatments without probiotics had no effect on quail meat pH and percentage of loss due to cooking and the rapeseed meal without probiotic had no effect on meat quality of quail (P>0.05). The treatment fed with the control treatment and the 25% rapeseed meal treatment with probiotics had the highest percentage of water retention capacity, lover loss due to cooking and higher amount of lactobacillus counted(P<0.05). The control treatments and 25% rapeseed meal had lover amount of malondialdehyde and 25, 50 % rapeseed meal treatments with probiotic had lover Escherichia coli count (P<0.05). Also 25% rapeseed meal with probiotic treatment increase villi height and decerse crypt depth compare with other treatments(P<0.05). In conclusion, this study suggests that inclusion of 25 % rapeseed meal instead of soybean meal with probiotic supplementation can positively affect meat quality, morphology, and microbial population in the ileum of Japanese quail we can use this available protein meal in the Japanese quail ration.
