بررسی شیوع استافیلوکوکوس اورئوس و یرسینیا انتروکولیتیکا در لبنیات عرضه‌شده در شهرستان خرم‌آباد

چکیده
لبنیات غنی از مواد مغذی هستند، اما وجود باکتری‌های پاتوژن می‌تواند سبب فساد آنها شده و پدیدآورنده‌ی عفونت و مسمومیت‌های غذایی باشند. تمرکز این پژوهش، بررسی شیوع استافیلوکوکوس اورئوس و یرسینیا انتروکولیتیکا در شیر و لبنیات سنتی عرضه‌شده در شهرستان خرم‌آباد بود. 100 نمونه شامل شیر خام گاو، ماست، دوغ، کشک و کَره سنتی از مراکز عرضه در شهرستان خرم‌آباد به صورت تصادفی در فصول مختلف سال نمونه‌گیری شد. نمونه‌ها در شرایط سرما به آزمایشگاه انتقال داده شدند. نتایج نشان داد در شیر و فرآورده‌های لبنی عرضه‌شده در شهرستان خرم‌آباد، از مجموع 100 نمونه، 25 درصد به استافیلوکوکوس اورئوس و 8 درصد به یرسینیا انتروکولیتیکا آلودگی وجود داشت. بیشترین آلودگی به استافیلوکوکوس اورئوس در تابستان (15 درصد) و کمترین میزان آلودگی به یرسینیا انتروکولیتیکا در زمستان (1 درصد) بود. بیشترین آلودگی به استافیلوکوکوس اورئوس کشک سنتی (10 درصد) و آلوده‌ترین محصول لبنی به یرسینیا انتروکولیتیکا شیر خام گاو (5 درصد) بود. نتایج نشان داد، بین آلودگی کره سنتی به استافیلوکوکوس اورئوس و یرسینیا انتروکولیتیکا، ارتباط آماری معنی‌داری برقرار بود؛ اما بین سایر لبنیات ارتباط آماری معنی‌داری وجود نداشت (p>0/05). آلودگی لبنیات به استافیلوکوکوس اورئوس و یرسینیا انتروکولیتیکا، خطر قابل توجهی برای سلامتی دارد. با توجه به تولید سنتی لبنیات از شیر خام در شهرستان خرم‌آباد، اجرای برنامه‌های نظارت مستمر، اقدامات کنترلی سخت‌گیرانه و تشدید روش‌های ضد عفونی از گاوداری‌ تا توزیع ضروری است.

Investigation of the prevalence of Staphylococcus aureus and Yersinia enterocolitica in dairy products sold in Khorramabad City

Dairy products are rich in nutrients, but pathogenic bacteria can spoil them, cause infections, and cause food poisoning. This study aimed to investigate the prevalence of Staphylococcus aureus (S. aureus) and Yersinia enterocolitica (Y. enterocolitica) in traditional milk and dairy products supplied in Khorramabad city. One hundred samples, including raw cow's milk, yogurt, buttermilk, whey, and traditional butter, were randomly sampled from supply centers in Khorramabad city at different seasons of the year. The samples were transported to the laboratory in cold conditions. The results showed that in milk and dairy products supplied in Khorramabad city, out % of 100 samples, 25% were contaminated with S. aureus and 8% with Y. enterocolitica. The highest contamination with S. aureus was in summer (15%), and the lowest contamination with Y. enterocolitica was in winter (1%). The highest contamination with S. aureus was whey (10%), and the most contaminated dairy product with Y. enterocolitica was raw cow's milk (5%). The results showed a statistically significant relationship between the contamination of traditional butter with S. aureus and Y. enterocolitica; however, there was no statistically significant relationship between other dairy products (p>0.05). Contamination of dairy products with S. aureus and Y. enterocolitica poses a considerable health risk. Given the traditional production of dairy products from raw milk in Khorramabad city, it is necessary to implement continuous monitoring programs, strict control measures, and intensify disinfection methods from dairy farming to distribution.
