English

Aspergillus flavus and Penicillium expansum are among the most important mycotoxin-producing fungi, responsible for food spoilage and serious health concerns. In recent years, postbiotics have emerged as a safe and natural approach to fungal inhibition. This study aimed to compare the antifungal effects of cell-free supernatants (CFS) derived from selected Lactobacillus species (L. acidophilus, L. casei, L. helveticus, and L. plantarum) and Bifidobacterium bifidum against A. flavus and P. expansum under laboratory conditions. Bacterial strains were first cultured in MRS broth, and their CFS was obtained by centrifugation and filtration. Different concentrations of CFS (0.25, 0.5, 1, and 2% v/v) were incorporated into PDA medium, and mold colony diameters were measured on days 3, 7, and 10 of incubation to calculate inhibition percentages. Results revealed that all CFS samples reduced fungal growth to varying extents, with inhibitory effects being both concentration and time dependent. The strongest inhibition was observed at 2% concentration on day 3 of incubation. Among the tested strains, L. casei and L. plantarum exhibited the highest inhibitory activity against A. flavus and P. expansum, respectively. In contrast, B. bifidum and L. helveticus showed the lowest inhibition percentages against A. flavus and P. expansum. Therefore, it can be concluded that CFS of Lactobacillus casei and plantarum have significant antifungal activity under culture conditions, and it is recommended that further studies be conducted on their replacement with chemical antifungal compounds in the food industry.
